First Look: Aether’s Swank, Seafood-Centric Menu in Fishtown

Aether, a new concept from the owners of Princeton’s Elements and Mistral in Princeton and King of Prussia, will open for dinner this Thursday, February 7th at 1832 Frankford Avenue.
It’s the fourth restaurant for owners Fia Berisha, chef and James Beard Award Semifinalist Scott Anderson, and Stephen Distler, with a focus on seafood, handmade pastas, wine, and craft cocktails. The sleek, expansive space includes a 20-seat bar and a one-of-a-kind chandelier and light fixtures made from repurposed wine and champagne bottles from Berisha’s collection.
Berisha will take a more hands-on role at Aether than at their other restaurants, helping to manage day-to-day menu execution and cooking in the kitchen one day per week. Aether’s head chef, Christopher Boyce, has worked his way up through the kitchens at Elements and Mistral in King of Prussia over the past five years.
The menu includes small plates and salads, sandwiches like a lobster roll and a shrimp po’boy, pastas, and entrees like a crispy-fried branzino, steak frites, and roast chicken. A seasonal raw bar menu offers the option to purchase a variety of East and West Coast oysters by the piece as well as seafood towers and caviar service.
Aether will be open for dinner from 4:30 p.m. until 10 p.m. Tuesday through Thursday, 4:30 p.m. until 11 p.m. Friday and Saturday, and 4:30 p.m. until 10 p.m. on Sunday, with the bar open until 1 a.m. each night, and closed on Mondays.
