Brigantessa’s New Tasting Menu Offers A Tour of Sicily
This week, Brigantessa premiered their new series of Southern Italian Tasting Menus, “Cucina Tipica,” created by chef and co-owner Joe Cicala.
Each month, he plans to focus on traditional flavors from a different region of Italy including, Sicilia, Sardinia, Campania, Puglia, Basilicata and Calabria.
Cicala’s first tasting menu will offer a four-course culinary tour of Sicilia for $45 a person with an optional $20 beverage pairing including selections from the restaurants cellar full of regional Italian wine, beer, grappa and amari.

Gamberi con la Conza
Sauteed rock shrimp with cruschi peppers, sliced garlic, Sicilian pistachios and parsley, deglazed with white wine and lemon juice.
Paired with Le Cantine di Indie Polpo Rosso IGT Nerello Mascalese.
Timballo di Anellini
Pasta cooked with tomato sauce with roasted, sweet and spicy peppers and basil, then baked with roasted eggplant and smoked scamorze cheese.
Paired with Le Cantine di Indie Polpo Rosso IGT Nerello Mascalese.
Farsumagru di Maiale
Berkshire pork loin stuffed with pork belly, chicken liver sausage and hard-boiled egg, served with broccoli rabe.
Paired with Alcesti L’Isola dei Profumi IGT Nero d’Avola, Perricone.
And for dessert…
A traditional Sicilian cannoli with espresso and almond whipped ricotta, chocolate-covered espresso beans and toasted almonds, paired with Averna Amaro.
The entrees are served family style–meaning huge portions and sharing encouraged. The tasting menu is offered nightly in addition to the restaurant’s regular menu and a la carte offerings.
