Running all summer, Cuba Libre will be serving an unlimited roast pork dinner every Monday. If you’re looking to begin your week with tender, falling-off-the-bone meat, this may be the answer.

We checked it out at the press preview, where chef-partner Guillermo Pernot roasted the whole pig outside for eight hours inside a “Caja China,” a Chinese roasting box. Seasoned with oranges and spices, the pig is slowly cooked inside the Caja China, and then flipped to allow the skin to crisp. From there, it is served family style at a carving station inside the restaurant along with orange mojo and jalapeño chimichurri.

Pernot is extremely excited about the addition of the Caja China for the summer: “In Cuba, it is common to use the word “china” to refer to anything that is mystical, exotic or unusual. This roasting box is exactly that – mystical.”

The meal is $25 per person (half price for children under 12) and includes roast pork, rice, black beans, salad, and grilled bread. As a part of their “pig pairing,” pitchers of sangria, including their seasonal Grilled Peach Sangria, are $5 dollars off on Mondays to go with the meal.  The feast will begin each week at 5 PM, and continues for as long as there is pork to eat.
