Volver Rolls Out New Menus
Volver, which recently overhauled its dinner menus has also redone its bar menu. And for fans of Avance’s lamb burger, the appearance of lamb burgers under the Snacks section has to set their hearts aflutter. For those not quite as obsessive as we are about Philadelphia’s restaurant scene, this looks like the result of Jose Garces bringing Justin Bogle on as corporate executive chef for the Garces Group. Bogle was integral to the “Season Two” menu at Volver and it would appear, at least one of the new bar menu items.
Other interesting items on the Volver Bar menu include salt-and-pepper wings and bao buns, clearly items that were popular at Garces’s Chifa. Makes perfect sense, after all Volver means “to return.”
As for Volver’s Season Two, the prices for the eight and twelve course menus are much more reasonable ($85 for 8 courses, $150 for 12) than the original pricing which was around $450 without drinks. Kentucky Fried Squab, From the Garden and Beef on Embers remain from the initial menu but the majority is new. In a recent press dinner, the Salinas Ecuadorian ceviche and underwelmingly named Cauliflower really stood out. That Cauliflower is really a carbonara pasta, black pepper crumble, quail egg, guanciale and yes, cauliflower.
Both menus have an optional beverage pairing, curated by Volver’s impressive sommelier and beverage director, Gordana Kostovski.
Also gone, thankfully, is Volver’s ticketing system. Now you just make reservations via OpenTable and odd numbers can be accomodated.
