Eat This Now: Kentucky Fried Sweetbreads
Chef Brian Lofink is understandably very excited by his latest special at Kraftwork. Last night I had his chicken fried sweetbreads and waffle, with Crystal’s ramps and maple demi glace. The dish is an excellent balance of sweet and savory. The perfectly fried sweetbreads will turn any offal novice into a gluton, demanding “more organs now!”
Lofink has the sweetbreads on special this weekend at the Fishtown bar and he says, “Im not scared to say I’ll stack it up to any sweetbread dish in the city and knock it down.”
