UPDATED: Spring Menu Preview At Sbraga

Before he reveals his new spring menu to the public, chef Kevin Sbraga will be holding a week of highly exclusive preview tastings at his eponymous Center City restaurant. The tastings will be $55 per person with reservations available (and necessary) from Monday April 23rd to Thursday April 26th at either 6 pm or 8:30 pm.
Chef Sbraga himself will be preparing and serving the five-course dinner to the six guests at the restaurant’s counter. That means six guests, twice a night, for 4 nights only. Only 48 people in the whole city getting to try the new menu before it goes live. And from these privileged seats, the lucky half-dozen will be able to watch the chef and his team while they work to prepare their meals and iron out any kinks in the new menu.
So then the question becomes, what might Sbraga be serving?
Among the dishes that might (or might not) be on the menu:
Wedge Salad with ranch, avocado, bacon, blue cheese, red onion and ash
Fried Green Tomatoes with cumin crème fraiche, cherry tomatoes, dill, feta and sweetbreads
Gem Lettuce with tomato, tuna, parmesan, jalapeno, quail egg, long beans served with a an olive oil and red-wine oregano vinaigrette
Foie Gras with peach marbré, warm brioche, hazelnut streusel, peach sorbet, pearl onions and mache
Bronzino en Croute with charcoal oil, grapes on stem, spring garlic soup, pine nut rice pilaf and sea beans
Parsley Risotto with escargot, garlic cream, prosciutto, chanterelles and sorrel
Seared Scallop with crispy pork belly, braising jus, shaved jalapeno, tabouleh, mint and cilantro
Chicken & Dumplings with a green curry sauce, grilled tomato salsa, scallions, granola and coconut rice foam
Gnocchi with pancetta, parmesan, poached egg, porcinis, grape tomato confit, seat beans, artichoke and dill
Wagyu Beef with fava beans, morels, short rib tortellini, truffle cream, bordelaise and tarragon oil
So make reservations for the preview now or you’ll have to wait until the entire menu is unveiled to have a bacon-and-ash wedge salad of your very own.
