There was a time not too long ago when Philly had zero shabu shabu restaurants. Then all of a sudden we had a bunch. And then we had a few less, as closures picked off the weakest of the pack. Through it all, Hippot has been the best offering excellent rich broths and a wide-ranging menu, with all the comforting stuff you can cook in the pot (thin-sliced sirloin, egg, pork) as well as the seriously weird (duck tongue, pig skin, live shrimp).
