Because who wants to spend 45 minutes cooking dinner after a long day at work? (No one. The answer is no one.)

Some days, I come home after work and just want to collapse onto the couch and never move again. But then I realize that I am an adult and I have responsibilities, like walking the dog and showering and making dinner. Ugh, making dinner.

Putting together a meal that is not just a plate of frozen sweet potato fries (which, I’ll admit, I totally do on occasion) can feel like hard work after a long day, and I know I’m not the only one who dreads standing in front of a stove for 30 minutes after sitting at a desk for nine hours. Which is why, for this week’s recipes, I give you five healthy, shame-free meals (no frozen sweet potato fries here) that will have you in and out of the kitchen and onto the couch in no time at all.
