The Sofitel’s Healthy New Menu
Dieters may soon find solace at the Sofitel. Starting on Tuesday, February 22, the hotel will be offering a lower-calorie menu that will allow diners to enjoy a “decadent and tasteful” three-course meal for under 500 calories.
The healthy menu will be available at both the hotel’s restaurant, Chez Colette, and its on-site bistro, Liberté, and will focus on fresh, whole ingredients and local, sustainable produce, meat and seafood. “I’ll be creating simple, visual dishes that appeal to both the eye and the palate, utilizing classic techniques and fresh, seasonal ingredients,” says Kevin Levitt, the Sofitel Philadelphia’s executive chef.
Though the menu is still being finalized, the Sofitel did share one of its healthy new recipes, the berry panacotta, below.
Panacotta with Fresh Berries

With hints of natural vanilla pods and the sweetness of honey, rather than processed sugar, the airy dessert is created with soya cream, a dairy-free healthful alternative, and paired with the exuberance of fresh raspberries and blackberries.

Ingredients for 4 persons:
- 1 cup of white cheese (low-fat cream cheese)
- 1 cup of Soya cream (dairy-free substitute)
- ½ vanilla pod
- 2 sheets of gelatin
- ¼ cup of raspberries
- ¼ cup of blackberries
- 1 tbsp of honey
