DIY Down the Shore: Vincent Stipo’s Peach G&T
Vincent Stipo, the man tending bar at Vernick, not only has the best beard stubble in Philadelphia, but his summer drink ranks as one of my favorite submissions thus far. Here’s what he had to say:
Summer cocktails are great because of all the fresh fruit available locally. I try to highlight these ingredients in simple classics. Light, refreshing and true to the season. Here is one I’ve been mixing for myself and a few friends the past couple weeks:
Peach G&T
2 oz Beefeater 24
1/2 oz fresh lemon
1/2 oz Cocchi Americano
1/2 oz Cocchi Americano
1/2 oz simple syrup (1:1)
1/2 of a peach (cut into cubes)
4 sprigs fresh thyme (reserve 1 for garnish)
1 small sprig fresh rosemary
Fever Tree tonic
Muddle peach with herbs and the simple syrup. Add gin, lemon, cocchi, and dry shake. Add ice & shake. Double strain into fizz glass, top with tonic, garnish with sprig of thyme.
