Grilled cheese is a diner standard — nothing more than bread, cheese, butter and, if you’re feeling fancy, tomatoes or ham — but Collingswood’s new Pop Shop isn’t a standard diner. Here, you’ll find 31 variations on gooey grilled cheese, from the classic Ogden (American cheese and tomato on Metropolitan’s country white bread) to the Washington (goat cheese, gruyère, baby spinach, red onion and prosciutto on focaccia). Eight types of bread, eight varieties of cheese, and five different flavored butters make for endless combinations — but the recipe for the classic tomato soup topped with Goldfish crackers is a rich, creamy constant.
