Tria Fitler Square Opens This Week

More windows, just one of the changes at Tria Fitler Square.

Tria’s Fitler Square location opens this week (exact day to be determined) at 23rd and Pine Streets, the former home of Dmitri’s. Although very similar to the other two Tria locations, this fermentables (beer, cheese, wine) bar will also feature a full kitchen, giving new executive chef, Karen Nicolas some more toys to play with. Nicolas comes with serious culinary chops, she was named one of Food & Wine magazine’s Best New Chefs 2012. Nicolas will oversee culinary operations for all four Tria locations. TheJohnson & Wales Culinary Arts alum was formerly executive chef at Citron & Rose and has worked at New York’s Gramercy Tavern, and apprenticed at the likes of California’s The French Laundry and Cowgirl Creamery in San Francisco.

Nicolas takes advantage of the full kitchen by adding a section of medium-sized plates that includes braised beef short rib with potato gnocchi and burrata cheese; trout piccata with semolina dumplings; and to the relief of Dmitri’s fans, a grilled octopus dish with orzo salad, and golden raisins.

The rest of the menu will be familiar to fans of Tria. Small plates, fresh salads and of course lots of cheese.

The layout of the space echos that of Dmitri’s, though the new Tria makes efforts to feel more connected to picturesque Fitler Square across the street. Additional windows, looking out onto the square, have been added behind the long bar, providing park views from every seat. The dining room contains two aisles, an embarrassment of riches compared to Tria’s tight Rittenhouse location, and seating for around 40. When the weather warms, outdoor tables will add another 30-seats. The interior of Tria includes white-washed brick walls, charcoal gray accents and blonde wood throughout.

For drinks, expect a similarly curated wine lineup to the other Tria locations and eight beers on tap.

Look for brunch to be added on Saturdays and Sundays. Sunday School and brunch in the same address? Could it be?
